Soil and climate The vines are planted on a plateau corresponding to the 2° terrace of the Tarn river. The Domaine Rotier Terroir is composed of very nice gravelly soils.
Grape varieties 40% Duras, 40% Braucol, 20% Syrah
Climate conditions 2006 was a dry and early vintage. Luckily, August was cooler and wetter which limited the summer drought effect. Red grapes matured very quickly with hot weather during the first week of September. 90% of them were harvested between September 7th and 14th under wonderful sunshine, before storms.
Type of winemaking After a soft de-stemming, alcoholic fermentation was conducted at 28°C. Maceration lasts between 3 and 5 weeks, with micro-oxygenation of the wine under the cap of grapes.
Type of ageing Ageing lasted 11 months in tank. Bottling occured on August 29-30, 2007.
Tasting notes The colour is dark purple. In its youth, this wine offers aromas of black fruits backed with scents of liquorice and pepper. On the palate, it is powerful, complex and rich in tannins.
Food recommandation It should be served between 16° and 18°C. and matches particularly well the typical dishes of the Southwest : Cassoulet, Duck breasts and legs as well as grilled red meats. It can be stored for 7-8 years.
