
Les Gravels rouge 2007
Soil and climate The vines are planted on a plateau corresponding to the 2d terrace of the Tarn river.
The Domaine Rotier Terroir is composed of very nice gravelly soils
Grape varieties Duras 55 %, Braucol 30 %, Syrah 15 %
Climate conditions A rainy Sprintime was followed by a dry Summer without any major heatwaves.
The sunny months of September and October made for perfect conditions for harvesting ripe, healthy grapes (harvest from September 17th to October 5th)
Type of winemaking The different grapes ferment separately at 28 - 30°C. Maceration lasts from 3 to 5 weeks, with micro-oxygenation of the wine under the cap.
Type of ageing Ageing lasted 11 months in tank with micro-oxygenation. Bottled on August 27th - 28th 2008
Tasting notes The colour is dark purple. In its youth, this wine presents aromas of black fruit, mingling with notes of liquorice and pepper. On the palate, it is a fruity, fleshy wine, with firm but gentle tannins.
Food recommandation It should be served between 16 and 18°C and matches particularly well with the typical dishes of the Southwest : cassoulet, duck as well as grilled red meats.
It may be cellared for 7-8 years
